Back again at my favorite Hoshinoya Tokyo, Japan's most luxurious urban ryokan and this is my second time in their tranquil Kiku room. 🎌🎎 Last night we wore our kimonos and socks to dinner, and were blown away by award-winning chef Noriyuki Hamada. 🐟 We were served Nippon Cuisine — a culinary style that focuses on fish, a common staple of ryokan dining and a key element in Japanese culinary culture, and prepared using French techniques.
